Medium textured soil, silt sandy clay composition, high content of organic matter Mediterranean climate.

Tasting notes

Brilliant yellow straw with olive hues. Lifted tropical melon and candied fruits are supported by intense mango, kiwi and honeysuckle on the palate. The natural acidity provides structure and freshness to the complex array of sweet tropical fruits.

Pairing

Excellent as an aperitif, it enhances in an exceptional way the typical Mediterranean dishes based on fish and shellfish. Also perfect pairing with tasty dishes such as foie gras or mature cheeses.

A "drunk" Pizza, enriched by local ingredients such as Piccantino del Belice cheese, a special ham seasoned in Nero D'Avola marc and stone-ground flour of ancient Sicilian grains. The perfect match for our Passivento Rosso Terre Siciliane IGT, also used for the final touch of the dish, the wine reduction.
