Alluvial and deep brown soils, medium texture, sandy-clay composition, high content of organic matter. Mediterranean climate.
Merlot is a selection of the best barrels during maturation. The must is fermented for 12-15 days with extended skin maceration and a delestage towards the end of fermentation. The wine is matured in a mix of one and two year old French barriques.
Intense deep red colour, almost black, with purple hues. The nose is complex with the integration of French oak balanced by plum, blackberry and spice. The palate is full and concentrated with dark berry fruit, subtle tannins and vanillan oak edges.
It particularly suits fatty and tasty dishes. It goes well with foie gras paté, salami and delicatessen meats. It perfectly matches the typical oven baked baby pork.
